Method
step 01: prepare the matcha
Start by sifting 1 teaspoon of matcha powder into a small bowl to remove any clumps. Then, add 2 tablespoons of hot water to the matcha powder. Remember, we don't want to use boiling water; we find that around 80°C/176°F is the sweet spot. After that, use a whisk to mix the matcha and water together until it becomes a smooth paste with no lumps.
step 02: Sweeten the Coconut Milk
Let's add some sweetness to our coconut milk. To do this, start by pouring your milk into a measuring cup or small bowl. Now, take your pick between honey or maple syrup and add a little to the milk — use your best judgment on how much to add. Stir until well combined.
However, if your coconut milk is sweet enough, you don't have to add anything.
step 03: Assemble the Latte
Time to kick this recipe up a notch — pour 1/4 cup (60 ml) mango purée into the bottom of a tall glass and then fill the glass with ice cubes. Pour the sweetened coconut milk over the ice, add the matcha mixture to the glass, and stir gently to combine.
